Overview

The Certificate is designed to teach you the basic craft skills of food preparation and service e.g. roasting whole poultry and serving in our student cafe. It will help you to understand the principles of cookery and service, such as, 'why does starch thicken a sauce?'

You will learn how to plan, prepare, cook and present a wide variety of dishes as if you were in a professional kitchen.

An integral part of your Study Programme is English and maths which will be wrapped around your programme of study. On successful completion of this course you can potentially progress onto a Level 2 Intermediate Apprenticeship or a full time Level 2 Study Programme in Professional Cookery.

There will be opportunities to enter competitions, take part in industry visits and trips relating to your course.

Entry Requirements

Maths and English at 1(G) or above
In addition: A keen interest in cooking.

Resources

You will be required to wear Chef whites. You will also need to bring your own stationery.
